Gingerbread Loaf

Gingerbread Loaf

I use two types of sugar but either would be fine. Coconut sugar has a lower glycemic
index. I substitute avocado oil for the vegetable oil.

Makes 6 small loaves.

Spice Mix:
1 teaspoon each: cinnamon and ginger
1/2 teaspoon each: cloves, nutmeg, coriander and cardamom

6 large eggs
1 cup coconut sugar
1 cup brown sugar
2 teaspoons vanilla
1 & 1/2 cups applesauce
2/3 cup avocado oil

2 teaspoons baking soda
1 teaspoon baking powder
3 cups Namaste GF flour blend (or other blend)
6 tablespoons crystallized ginger, chopped fine

1. Heat oven to 350 degrees. Spray metal loaf pans with non-stick spray, like coconut
oil. Line the pan with parchment paper to cover the bottom and up the long sides
with some leftover on top.
2. Mix spices together.
3. Mix eggs & sugars until combined, Add spice mix, vanilla, applesauce & oil. Blend
well
4. Add dry ingredients and blend just until combined (too much can make the dough
gummy). Stir in ginger bits.
5. Bake for 30 minutes (50 minutes if you make large loaves). Let cool.
