Chocolate Mint Zucchini Brownies

 

4 cups grated zucchini

4 cups whole wheat flour

2 tsp salt

1 cup cocoa (dark or dutch cocoa)

1 cup coconut oil, melted

3 cups organic cane sugar (or less)

3 tsp baking soda

3 eggs

4 tsp vanilla

2 tsp pure peppermint extract

1 cup chopped nuts

  1. Preheat oven to 350 degrees. Grease & flour TWO 9×13 pans.
  2. With mixer, blend ingredients, in order given, 2 minutes or until well blended. Fold into prepared pans. Bake 40 minutes or until a toothpick comes out clean. Frost if desired. If using square pans or smaller baking dishes, adjust the baking time.
